White Arctic Granny and Golden Apple Gazpacho

In the "twist on gazpacho" category, this chilled apple soup is a tart, sassy winner with a distinctly refreshing kick in a simple recipe with a bit of garlic, sherry vinegar and crusty bread to dip. This sprightly summer recipe was developed by Complete Culinary LLC.

Ingredients

5 1/2 oz. white Italian bread, crust removed

9 oz. peeled, slivered almonds

1 1/2 cups water

2 tsps. minced garlic

1 Tbsp. sherry vinegar

3 cups water

1/2 cup extra virgin olive oil

19 1/2 oz. Arctic Granny apples, 1/2 or 3/4-inch dice

5 1/4 oz. Arctic Golden apples, 1/2 or 3/4-inch dice

2 1/2 tsps. kosher salt

Steps

1. Soak bread in 1-1/2 cups water for 10 minutes.

2. Combine bread and remaining ingredients and blend in a strong blender until very smooth.

3. Taste for seasoning.

4. Chill thoroughly.

5. Add more cold water if it's too thick before serving. Retaste for seasoning.

6. Garnish portions with chopped Arctic Granny. You can also add a small sprinkle of green onion.
