Fresh Vegetable Wrap with Black Bean Hummus

In this super fresh new recipe from Morrison Healthcare, you'll find a garden party of veggies perfectly paired with nutrient powerhouse black bean hummus. Perfect for an outdoor picnic.
Ingredients
4 Tomato Basil Tortillas, 12"
1/4 cup black bean hummus, purchased or favorite recipe
4 oz. peeled and julienned cucumbers
4 oz. julienned red bell peppers
4 oz julienned yellow bell peppers
2 oz. bias cut green onions
2 oz julienned carrots
4 oz grape tomatoes, halved
1/4 cup chopped fresh cilantro
8 oz. chipotle mayonnaise, purchased or favorite recipe
8 oz. red grapes
Steps
- Place tortillas on large work surface. For each, spread 1 Tbsp. black bean hummus evenly over entire tortilla, making sure to go all the way to the edges. In center of each tortilla, lay a straight line of 1 oz. cucumber. Top with 2 oz. red and yellow peppers, combined. Top with 1 Tbsp. scallions, 1 Tbsp. carrot, 1 oz. tomatoes and 1 Tbsp. chopped cilantro. Make sure some ingredients hang out of sides, like sushi.
- Fold the bottom of the tortilla over the middle ingredients to form a cylinder. Roll the wrap onto itself to form a long cylinder. Cut wrap directly in the middle. Cut each half into two more halves to form 4 total pieces. Serve with chipotle mayo and grapes.
