The former Portillo’s COO who stepped down from that chain last week is the new CEO of the growing Condado Tacos.
Derrick Pratt was named CEO of Columbus, Ohio-based Condado on Tuesday, replacing former CEO Chris Artinian. Pratt is scheduled to take the helm on July 1, and will focus on expansion, operations and people development.
“Derrick brings a wealth of experience in running successful growth-oriented restaurant brands and has an exceptionally strong track record of guiding companies through periods of significant expansion through strong leadership and innovation,” said John Troiano, chair of Condado’s board, in a statement. “Condado Tacos has doubled over the last three years to 50 locations across 10 states and 18 markets to date, and we are thrilled to have Derrick lead the company through its next phase of growth.”
Pratt joined Portillo’s in 2020 and was named COO in 2021, helping to guide that chain through an initial public offering that year. Before that, he was with Starbucks in a variety of operations roles, including regional vice president of operations. And he spent more than two decades with McDonald’s as a vice president, and also as a franchise operator.
Pratt said Condado founder Joe Kahn and the management team have built “something truly special.
“I’m excited to join the Condado Tacos family in this leadership role as we focus on strategic expansion, operational processes and people development,” he said in a statement. “I aligned quickly with the Condado team on a shared vision and strategy to pair best-in-class operations and craveable food in a unique ‘Come As You Are’ culture and environment.”
Condado is known for its menu of both signature and build-your-own tacos, bowls and nachos, as well as a full bar.
